We monitor in two ways.
The most common is agent-less monitoring. We would set up a machine in your network to scan your network to pull data off your devices. This uses the WMI and SNMP protocols depending on the type of device. This is the most common way as it doesn't include having to install something on a machine.
Agent based monitoring is common with laptops. We put agents on laptops that way even when they leave your network we can still monitor them remotely and have access to them to patch at night.
